Every bunch is destemmed by hand and micro-vinified in 225-litre barrels, and the wine then rests for years in barrel and bottle before release. Great aromatic complexity from long aging, while keeping the fruity aromas typical of the bodega's Malbec. Hand-picked into 12 kg boxes, destemmed by hand, cold maceration at 8 °C for 10–15 days and fermentation in French oak barrels with daily manual pigeage. Aged 24 months in new French oak, followed by 7 years in bottle. Aging potential of more than 20 years. Serve at 14–16 °C.
